Esperimenti ai fornelli: Pangoccioli.

Today's recipe is about natural leaven, once again. I want to show you how prepare chocolate chip buns, they are perfect for breakfast and I will demonstrate that natural leaven is great even with sweet doughs. You must try it!

Oggi vi riporto un'altra ricetta con il lievito naturale. Questa volta è un dolce perfetto per la colazione, e con questa ricetta possiamo tranquilamente sfatare il mito che il lievito naturale lievita poco o dà una nota acida agli impasti. Provare per credere!

Ingredients (makes about 12).
170gr refreshed natural leaven
250gr buttermilk
460gr flour
75gr sugar
a hint of salt (about 6gr)
60gr butter (room temperature)
150gr dark chocolate chips

Ingredienti (circa 12 pangocciole).
170gr lievito naturale rinfrescato
250gr latticello
460gr farina
75gr zucchero
un pizzico di sale (circa 6gr)
60gr burro a temperatura ambiente
150gr gocce di cioccolato fondente


Preparation.
Stir the yeast in the buttermilk until combined, add all the dry ingredients and start kneading on a pastry board. Meanwhile, add butter in the dough, piece by piece. At last, add dark chocolate chips without over-kneading otherwise they will melt.
Put the dough into a bowl, covered with plastic wrap and leave it rise for about 3 hours at room temperature.
Pick back the dough, put it back on the pastry board and shape it as a rectangle, fold it as shown in the pictures and then leave it rest, covered in the bowl for another hour.
Cut the dough and make about 12 buns, or even more if you want them smaller. Put them on a baking sheet on a tray and cover them with plastic wrap, leave them rise for about 3 hours.
And now we're finally ready to bake: brush the buns on top with melted butter and bake them for about 30 minutes at 180'C (356'F) without fan.





Procedimento.
Sciogliere il lievito nel latticello, unire le polveri e passare sulla spianatoia ed impastare. Nel mentre, aggiungere un po' alla volta il burro ammorbidito. Aggiungere per ultimo le gocce di cioccolato cercando di non sciogliere.
Mettere l'impasto in un recipiente coperto con pellicola e lasciare riposare per circa 3 ore a temperatura ambiente.
Riprendere l'impasto e formare un rettangolo, poi eseguire le pieghe mostrate nelle foto. Lasciare riposare nuovamente per un'ora.
Riprendere di nuovo l'impasto, formare delle palline e posizionarle su uno stampo da forno rivestita con carta da forno. Coprire con pellicola trasparente e lasciare lievitare per altre 3 ore.
Siamo pronti per infornare: spennellare con un po' di burro fuso i panini e cuocere in forno statico per 180' per circa 30 minuti.


Tips.
- In Italy buttermilk is not as common as in English recipes, so it can be swapped with 125gr of light white yoghurt, 125gr of skimmed milk and a tablespoon of lemon juice.
- As always, balance quantities of this recipe according to your natural leaven, both for its "strength" and consistency.
- If you don't like chocolate, you can use raisin or nuts. But if you say so, I won't believe you: 9 people out of 10 love chocolate, and the tenth one is lying! :-)

Suggerimenti.
- L'uso del latticello fa pensare ad una ispirazione made in USA, come alternativa si possono usare 125gr di yogurt bianco magro, 125gr di latte scremato e un cucchiaio di succo di limone.
- Come sempre, cercate di calibrare gli ingredienti liquidi e solidi secondo la consistenza del vostro lievito.
- Per chi non ama il cioccolato, in alternativa si possono usare uvetta e frutta secca. Ma si sa, 9 persone su 10 dicono di amare il cioccolato... e la decima ha mentito! :-)

Che dire, io li adoro! Non li faccio spesso perchè mi rendo conto che ci voglia un po' di tempo per farli, ma sono davvero buonissimi!! Io consiglio davvero di farli!!
